Here's a perfect recipe for a quick meal that's also light on the calories and fat.<br />

<b>Ingredients: </b><br />
<br />
(6) ounces broiled <a href="http://www.betterthanabistro.com/Black-Labe-Delmonico-Ribeye-8-Steaks-12oz-Each-p/bldelmonico812.htm" target="_blank">BTAB Boneless Ribeye Steak</a>, cut into thin strips<br />
(1) tablespoon vegetable oil<br />
(2) cups blanched or steamed broccoli<br />
(1) cup blanched carrots, sliced diagonally<br />
(½) cup onion slices<br />
(1) tablespoon white wine<br />
(1) tablespoon soy sauce<br />
(½) teaspoon corn starch<br />
(¼) teaspoon granulated sugar<br />
Salt to taste<br />
<br />
<b>Preparation:</b><br />
<br />
In 10" skillet or wok, heat oil; add broccoli, carrots and onion. Cook, stirring quickly and frequently until vegetables are tender crisp and onions are browned. Stir in beef strips. In a small bowl combine remaining ingredients, stirring to dissolve corn starch. Add beef mixture and cook stirring constantly until sauce is thickened, 2-3 minutes. Last week I asked, "What can I stop/start doing right now that will be relatively painless, sustainable and manageable to allow for my lifestyle change? And oh yeah, doesn't cost anything!"<br />
<br />
First, I stopped drinking soda altogether. I am a man who enjoys a few Cokes every day. When I realized that wasn't healthy I switched to ginger ale. Like an alcoholic who goes from vodka to beer. That's still no the most desirable solution so now I drink lots of water!<br />

I didn't start drinking coffee until my mid 30's. So after drinking that pot of very strong coffee and then shaking and sweating through the day I decided to do some research. That's when I found green tea. I know, yuck! But I actually love it now. I use 3-4 tea bags per cup. I didn't cut out the coffee altogether but I have easily cut my consumption in half and I never have it after 1pm of so. I absolutely feel better and green tea has lots of benefits and some caffeine too.<br />

I realized that for me, eating has been habitual. I eat more on holidays because I am conditioned to. Every cultural event in every society is based around food. But why, I asked, does different food, like turkey's at Thanksgiving, have to mean super-sized portions? It doesn't have to. Why? I do have some rationalizations but the only real answer is - I love to pig out!<br />
<br />
I also realized that I eat 3 meals and a snack with those meals every day no matter what. With that two more things became apparent; I shouldn't eat if I'm not hungry and I should stop when I'm full. Yeah, I know, I had to learn that. It's only natural to follow that train of thought to real behavior modification; i.e. lifestyle change.<br />
<br />
If I get home from work late, and I often do, I don't eat a full dinner and snack. I am hooked on cucumber and tomato salad (cucumber, tomato and balsamic vinegar, with a touch of salt, basil and white pepper). I know I don't need to eat more than that but I need to chew something. So I'll throw a piece of tilapia (low-calorie white fish) in the broiler for like 5 minutes with a little dressing and Old Bay seasoning. I'm not a seafood guy, but this flaky mild white fish is easy to cook and very healthy.<br />
<br />
I love burgers, so now I eat buffalo burgers, which are lower in fat than beef, pork and chicken breast. I stopped fast foods, fried foods, and I try to prepare a lunch for the week on Sunday night. This is a picture of me and my wife's lunch for the week. All made in minutes on one grill.<br />

How do I do this? Easy! Everything is flash frozen and portion controlled. In the picture above you see five different fish, all prepared on one grill on Sunday night. This is five lunches for both of us for the week. Yes, we throw in a salad or some grains or even pasta (God forbid) but the fish makes the lunch healthy, quick and easy. Just heat it up in the microwave or eat it cold. The choices are endless too.</div>

I'm fortunate to own a company that sells the fish in this way, but everyone....I repeat, EVERYONE, can eat like this! It's not more expensive and it's much easier and healthier than any other way to shop and eat. But that's another story. </div>

It can't be stated enough that portion control is mission critical to any lifestyle change I'm trying to undertake. <b>NOT MODERATION!</b> Moderation for me insinuates that it's bad for me in large amounts but okay in smaller amounts. What, like mercury and arsenic? But I digress...... </div>

The tiny changes and habits I have either learned or broke are just a start. But I have lost a few pounds over the holidays and still ate everything I wanted. Yes, of course I did pig out on Thanksgiving. But the very next day I had a protein shake for breakfast (I even throw some veggies in with it) with an apple and a power bar.<i> </i>And that's far better than what I usually do EVERY year on the Friday after Thanksgiving, which is a huge breakfast at the diner. I realized that if I do this type of meal replacement just once a day, or at least try, it's easier to keep track in my head. After all, I can't manage what I don't measure. So that one meal a day is my way of measurement. <br />
<br />
For my protein shake's I use <a href="http://lynfit.com/collections/supplement/products/complete-protein-shake" target="_blank"><b>Lisa Lynn's Vanilla LynFit Complete Protein Shake</b></a>. I get full and have more energy from the protein, which brings me to an earlier point.....I stop eating when I'm full. I don't eat just to be eating! The bottom line is to substitute the good for the bad, or at least the better for the worse.<br />
<br />
Anyway, my plight continues. I'll keep you posted from time to time. All I can do is the best I can do, and I'd love that for you too......just saying!<br />

There are two things we all have in common in this life:<br />

<li>We all need food and water to live</li>
<li>Time marches on and now we are all a year older</li>
</ul>
I find that I procrastinate more often than not with almost every project I undertake. Especially the big ones. Part of the reason is I look at the finish line first. Too often I think once I start "this" project it will take so much time, is it worth it and do I even have the time to invest in it? Then I ask if "this" project is really a priority. It seems like a long road to hoe and clearly I'm very busy....<i>being busy. </i><br />
<br />
<a name='more'></a>At 52 years old it's finally time to face facts. This is no longer a project like losing holiday weight or preparing for a week of backpacking. Either I'm going to adopt a healthier lifestyle in general or not. In my 30's my perception was I'm fit and healthy. I hike, cycle and lead an active lifestyle. If I gained some weight I'd lose it in a few weeks if I wanted. Did I mention I'm 52? It's not easy anymore. The holiday weight I usually gain and lose seems to be askew! I gain 10 and lose 8. After a few years of that I find myself in that 'I look okay in clothes' mentality. Then I compare myself to other men my age and say, "Hey, I look better than him....and him....oh, not him.....drats, foiled again! Maybe I'll do a cleanse or something."<br />
<br />
Being in the food business I am acutely aware of the choices I make, both good and bad. It's finally sinking in that no diet, cleanse or magic bullet will have any long-term affect. Frankly, long-term affects is the first paradigm shift. It boils down to a lifestyle change. A shift of how I view food and my eating habits is in order.<br />
<br />
I didn't wait til the stroke of midnight on New Year's Eve, splash cold water on my face and throw out all the food in my house to start over. I didn't donate that food to a shelter because, hey....if it's not good enough for my health it's fine for those less fortunate, right? Not! I didn't magically transform into Jack LaLanne either.<br />
<br />
No, I need baby steps and simplicity. Thankfully I have wonderful people in my life today who are very healthy and fit and have been "walking the walk" every day for years, making it look easy. What did hit me like cold water in the face is a lifestyle change will have to be genuine. I can't fake it and it won't happen overnight (it's not a project with an end), but there are choices I can make every day that won't feel like I'm a dog with a shock collar trapped in a tiny backyard.<br />
<br />
I have been viewing the whole food thing all wrong. It was a revelation when I asked myself one question that had many many answers; what can I stop/start doing right now that will be relatively painless, sustainable and manageable? Oh, and doesn't cost ANYTHING!<br />

Preheat oven to 325F. Pour the orange juice into a shallow baking dish that is long enough to hold the fish. Brush the fish lightly with oil and place in the baking dish.<br />

In a bowl, combine tarragon, pepper and grated orange zest. Sprinkle this mixture on top of the fish, patting it lightly to form a thin crust.<br />
<br />
Bake for 20-25 minutes, until the fish flakes easily with a fork. Remove the fish carefully to a serving dish. Their lives revolved the availability of bison whose original range was from Alaska to Mexico to the Florida panhandle. But by the 1890's this all changed as the bison were being eliminated by European settlers. This occurred for 2 reasons.<br />
<br />
First, there was the greed factor. For a good part of the 1800's bison were considered to be in limitless supply. For non-native buffalo hunters they were the equivalent of a gold mine on 4 legs. This group hunted bison from trains and horseback for their tongues, hides, bones and little else. The tongue was, and still is, considered a delicacy. Hides were prepared and shipped to the east and Europe for processing into leather. Remaining carcasses were, for the most part, left to rot. By the time nothing but bones remained, they too were gathered and shipped via rail to eastern destinations for processing into industrial carbon and fertilizer. By the 1890's with numbers nearing extinction, the bison "gold rush" was over. <br />

At the same time, the American government openly encouraged elimination of the Plains Indians' primary food source, the bison. In so doing, the Indians would be forced into relatively small areas, or north into Canada. In either situation, food sources were either scarce or non-existent. The results were starvation, and high infant mortality amongst the Indian populations. In the end the west was open to European settlement and the start of the western beef industry.<br />
<br />
Only in the last 10-15 years can it be said that North American Bison have returned from the near extinction they faced in the 1890's. What was once decimated to less than 2,000 in number has, through careful breeding and and nurturing, returned and flourished.<br />
<br />
Today it is estimated that the total herd size is in the 550,000 range, about 275,000 of which are based in Canada. This of course is a far cry from the approximate 50 million animals that roamed the western ranges prior to European settlement. However, today's herd size is still substantial enough to sustain bison meat consumption to a point where it is expected quadruple by this year.<br />
<br />
<b>Is it really healthier?</b> The short answer is yes. Buffalo is lower in fat and higher in protein than Beef, Pork or Chicken Breast. But that's not the whole story. In fact, cooking techniques and cut of meat has much to do with it.<br />
<br />
The USDA publishes this breakdown:<br />

<ul>
<li>Buffalo 100g: Calories = 143, Fat = 2.42g</li>
<li>Beef 100g: Calories = 211, Fat = 9.28g</li>
<li>Pork 100g: Calories = 212, Fat = 9.66g</li>
<li>Chicken Breast (Skinless) 100g: Calories = 177, Fat = 7.70g</li>
</ul>
<br />
<b>How do I cook buffalo?</b> Bison steaks, roasts, stews, burgers and the like, all require slightly different cooking techniques than is the case for beef. Bison's lower fat content is one reason why special cooking considerations have to be made. You can use buffalo in the exact same way however. Cook slower at lower temperatures. Buffalo should not be heated to internal temp higher than 165F. Buffalo is perfect when the center is slightly brown and the juices run clear. <br />

As the cool weather sets in and autumn activities commence,
there is nothing better on a chilly afternoon than a warm bowl of spicy
chili. So, on Sunday, I made chili for
my family. But instead of traditional ground beef, I tried Better Than A Bistro’s
<a href="http://www.betterthanabistro.com/Ground-Turkey-6-16oz-Pkgs-p/groundturkey.htm" target="_blank">ground turkey</a> as a healthier alternative. In addition to being lower fat and
protein packed, this recipe is simple, delicious and—especially—perfect for a
demanding schedule. As it simmered for four hours in a slow cooker, I spent the
day with my family, rather than stuck in the kitchen. </div>

<li>8 (about 2ozs) dried shitake mushrooms</li>

<li>1 packet equal sweetner</li>

<li>1 tsp ginger, minced and peeled, optional </li>
<li>1/2 cup fat free, low sodium, chicken broth</li>
<li>2 cloves garlic, thinly sliced</li>
<li>8 heads baby bok choy, halved lenthwise</li>
<li>1 head (about 8 cups) romaine lettuce, cut crosswise into 1" pieces</li>

<i><b>Directions</b></i><br />

1. Comibine 1 cup boiling water and shitake mushrooms in a bowl, cover and let stand for 20 minutes. Drain mushrooms in a colander bowl; reserving liquid. Rinse mushrooms. Remove and discard stems, cut into quarters and then set aside.<br />
<br />
2. Combine soy sauce and equal sweetner in a small bowl, stirring with a whisk.<br />
<br />
3. Heat a small saucepan over medium-high heat. Add 1/2 tsp oil and ginger to pan, saute for 30 seconds. Add reserved mushroom liquid and broth; bring to a boil. Cover, reduce heat and simmer for 20 minutes.<br />
<br />
4. Heat a wok or large skillet over high heat. Add remaining 1/2 tsp oil to pan. Add garlic; stir fry 10 seconds. Add bok choy; stir fry 2 minutes or until bok choy begins to soften. Add lettuce; stir fry 2 minutes or until lettuce wilts. Stir in mushroom mixture and soy sauce mixture; cook for 3 minutes or until bok choy is tender.<br />

The sweet citrus vinaigrette can be made ahead of time and stored in the refrigeration. Use Maple Grove Walnut Vinaigrette or Paul Newman's Low fat dressing. If you prefer to make the dressing from scratch you can use this recipe:</div>

1.) Preheat the frill to medium-high heat. for indoor grilling use the George Forman Grill.</div>

2.) To prepare vinaigrette, combine the first 6 ingredients in a large bowl; stir well with a whisk. If you did not make dressing from scratch this step is where you can substitute your favorite low fat bottled dressing</div>

3.) To prepare salad, drizzle lemon juice over fillets; sprinkle with 2 teaspoons of pepper. Place fillets, skin side up on a grill rack coated with cooking spray, grill 5 minutes on each side or until fish flakes easily when tested with a fork or is at your desired degree of doneness. Remove skin.</div>

4.) Add spinach to vinaigrette in a bowl, toss well. Place two cups of spinach mixture on each of 4 serving plates, arrange 1 warm salmon fillet and 6 orange slices on top of greens. </div>

Instead of sitting down with boring parents and annoying younger siblings, they'd prefer to load their plates, scurry away and separate themselves in their own rooms to eat. With the fast growing pace of technology in today's world it is hard to get kids to sit down with the family when they could go to their own room and plop down with their IPad or laptop. Evidence shows that this destructive behavior must come to a stop.</span></span></span><br />

<span style="font-family: Arial;"><span style="color: #444444;"><span style="font-family: inherit;">According to TLC's "How Stuff Works", the National Center on Addiction and Substance Abuse (CASA) at Columbia University researched the benefits of family dinners and found clear results. Specifically, researchers compared the responses of children who reported having family dinners fewer than 3 times a week to those who have family dinners 5 or more times a week. The study concluded that children who enjoy frequent dinners with their family are far less likely to develop substance abuse problems. If a child has family dinnertime on a regular basis, he or she is:</span></span></span><br />

<b>Freezer Safety</b><br />
<br />
A full freezer will remain below 40°F for about two days, and a less-than-full freezer will maintain that temperature for approximately one day. Rearrange meats so their juices do not drip onto other foods as the meats begin to thaw. Throw away any ready-to-eat item that comes in contact with meat juices.<br />

Frozen foods that have partially orcompletely thawed can be refrozenif they contain ice crystals. If they have completely thawed but are still at a temperature of 40°F or below, they also can be refrozen. Use a digital thermometer to check the temperature of the food. Although partial thawing and refreezing of these foods will be safe, the quality of some foods, especially vegetablesand fruits, may be reduced. Hard cheeses, breads, and fruits and vegetables and their juices—if they look and smell normal—can be refrozen even if they have been above 40°F for more than two hours.<br />

One way to ensure the safety of thawed meat products that have been above 40°F for two hours or less is to cook them immediately. Either serve the food immediately or refreeze the cooked item. Be sure to cook to the proper temperatures, checking internal temperatures with a digital thermometer. Refrigerate and use within two days or freeze the leftovers immediately.<br />

Foodborne illness is very uncomfortable and sometimes life-threatening, especially for the very young, the senior population, and those with weakened immune systems. Don’t take chances on your family’s safety for the sake of a few dollars in groceries. Remember: When in doubt, throw it out!<br />

This will take the guesswork out of determining the temperature of your units. Also, keep a digital thermometer on hand. This utensil will enable you to check the temperature of thawed foods to determine their safety. When the power goes out, try to find out how long it is expected to be off. If it will be for only a few hours, don’t do anything. Open the freezer or refrigerator door as little as possible, for this will allow the units to maintain their chilled temperatures longer.<br />

If the power is off for more than two hours, you should begin to monitor the temperature of the refrigerator. Keep the thermometer close to the opening of the door. This will allow you to open the door only slightly, keeping the temperature lower. Check the temperature each hour. When it reaches 40°F, place block ice in a container in the refrigerator. You also might consider placing perishable items in a cooler with ice or ice packs around them.<br />
<br />
If the temperature of the refrigerator rises above 40°F for more than two hours, you will need to discard the perishable foods listed below:<br />

<li>meat, poultry, seafood</li>
<li>cold cuts, hot dogs</li>
<li>casseroles</li>

Any food that has an unusual odor, color, or texture also should be discarded. Never taste foods to determine their safety!<br />

Even though it’s not an official holiday, Halloween is much beloved
by children and adults alike. What could be more fun than
trick-or-treating, apple bobbing, or costume parties?<br />
To make sure treats are safe for children, follow these simple steps:<span style="font-weight: bold;"><br /></span><br />

Children shouldn’t snack while they’re out trick-or-treating. Give them
a light meal or snack before they head out – don’t send them out on an
empty stomach. Urge them to wait until they get home and let you inspect

Tell children not to accept – and especially not to eat – anything that
isn’t commercially wrapped. Inspect commercially wrapped treats for
signs of tampering, such as an unusual appearance or discoloration, tiny
pinholes, or tears in wrappers. Throw away anything that looks

Cut out lots of apples from red construction paper. On each apple,

for participating.</li>

<li>“Scare"
bacteria away by keeping all perishable foods chilled until serving
time. These include finger sandwiches, cheese platters, fruit or tossed
salads, cold pasta dishes with meat, poultry, or seafood, and cream pies
or cakes with whipped-cream and cream-cheese frostings.</li>
<li>Bacteria
will creep up on you if you let foods sit out too long. Don’t leave

Does diet really matter when it comes to breast cancer? Since October is Breast Cancer Awareness month, this is the perfect time to answer that question.<br />
<br />
And the answer is a resounding yes. Breast cancer risk can be decreased by up to 38% through lifestyle
factors including maintaining a healthy weight, exercising regularly,
and eating a healthy diet. In fact, less than 10% of breast cancer
appears to have a genetic basis.<br />
<br />
For prevention of breast cancer,
limiting alcohol to one drink a day (5 ounces of wine, 12 ounces of
beer, or 1.5 ounces of spirits) is one of the most important things that
you can do. In addition, a plant-based diet loaded with at least two
cups a day of a variety of produce is beneficial.<br />
<br />
According to the American Institute for Cancer Research,
"no single food or food component can protect you against cancer by
itself. But scientists believe that the combination of foods in a
predominantly plant-based diet may. There is evidence that the minerals,
vitamins and phytochemicals in plant foods could interact in ways that
boost their individual anti-cancer effects. This concept of interaction,
where 1 + 1 = 3, is called synergy."<br />
<br />
<a name='more'></a>Some of their top picks
for cancer prevention include beans, berries, cruciferous vegetables
(broccoli, cauliflower, cabbage, brussels sprouts), dark leafy green
vegetables (spinach, kale, chard, romaine, mustard greens), flaxseed,
garlic, grapes/grape juice, green tea, soy, tomatoes and whole grains. A
recent study in mice suggests that walnuts may also play a role in
breast cancer prevention, but these findings need to be confirmed in
humans.<br />
<br />
There is also a growing body of research suggesting that
curcumin, one of the active components of curry, may play a role in
both the treatment and prevention of various types of cancer including
breast cancer.<br />
<br />
Being overweight is strongly associated with the
risk of postmenopausal breast cancer. Adult weight gain of 22-44 pounds
is associated with a 50% greater risk and a weight gain above 45 pounds
is associated with an 87% increased risk.<br />
<br />
Excess belly fat seems
to be particularly harmful, most likely because of its effects on
inflammation and its association with elevated insulin levels, so if you
tend to be more "apple shaped" and carry extra weight in your belly, it
is especially important to lose weight, exercise regularly, and limit
refined grains, sugar sweetened beverages, and added sugar in your diet.<br />
<br />
When
it comes to breast cancer survivors, a healthy lifestyle is just as
important, if not more so. Many women are concerned about soy
consumption. Nutritionists agree that
up to three servings per day is safe, but they emphasize that soy
should come from whole foods like soy milk, edamame and tofu, and that
supplements like smoothies, bars and soy fortified cereals should be
limited.<br />
<br />
Finally, during treatment, diet is very important to
maintain health and optimize energy levels, but before taking any
supplements, it is best to consult with a registered dietitian,
preferably one that has experience with cancer treatment, because some
supplements may actually interfere with chemotherapy or radiation. In general, the emphasis should be on whole foods rich in
anti-oxidants. Vitamin C may need to be supplemented in some cases if
not enough is consumed in the diet.<br />
